Writing a cookbook was always a dream of mine. To have that ability to really positively influence and inspire someone else to challenge themselves in the kitchen, or try something that they might think is out of their reach, is motivational. And then not only show them how to produce it, but how many different ways that same ingredient, recipe, or food combination can be replicated to achieve an entirely different result.
This is where TOO comes into it. Staying true to my Italian heritage, this cookbook will provide you with options within the realm of contemporary Italian cuisine. What else can you do, too? Why not try this or that, too? It’s opening up a world of possibilities to your table.
I really wanted to demonstrate diversity with this cookbook. The Table of Us, was about showcasing and celebrating some of the Italian classics that we all have come to know and love. It promoted a no-fuss outlook while utilising quality produce that we have available on hand. Packet pasta, tinned sardines, and the like. But now, with TOO, I want to promote simplicity in other ways.
I want to show you how you can take your culinary skills up a notch, while still embracing an uncomplicated approach. I want to teach you just how achievable making fresh pasta can actually be, and how we can build confidence to incorporate this into the everyday kitchen. I want to demonstrate the endless opportunities that basic ingredients, and in this case egg and flour or semolina and water, can actually give us a multitude of pleasure from all of our senses. The sight, taste, touch and smell, and finally the joy. It’s the only way to cook in my opinion.
